The idea for Corazon en un Platillo: Poesia y Recetas de Amor came from a photograph of a famous Mexican recipe that is seldom made, and a longing to help families preserve their culture while improving their health.  Our unique collection of recipes combines classics from around the Spanish-speaking world with innovative ideas for creating a lower calorie, more nutritious way of eating. We collected recipes from the community in order to preserve traditional cooking techniques, while adding a variety of the freshest, most healthful ingredients available. Options for gluten-free, low-carb, vegetarian and raw preparation are provided for most of our meals, along with nutritional information aimed at helping you make the best choices for your family.

While creating this cookbook, we kept accessibility in mind. Many of the recipes can be made in half an hour or less, and offer options for replacement ingredients in case you can’t find what the recipe calls for in your neighborhood market.  We have included pictures of ingredients and simple suggestions for basic preparation of fresh fruits and vegetables. Cooking techniques are clearly explained to take the guesswork out of your time in the kitchen.

No recipe is satisfying to me without knowing a bit of the history that goes behind it. Each dish features an anecdote that is sure to increase your appreciation of the food, the people who traditionally made it, and the region in which they live. Coupled with original works of art and poetry, Corazon en un Platillo will make a special addition to any cookbook collection.
