Tip of the Day #10 – Want Quick and Easy Gluten-Free Pumpkin Pie?


The simplest way to make a gluten-free pumpkin pie is to go crustless. What i have done for years is pour my prepared pumpkin mixture into muffin cups and bake until done. In this way, I leave out the gluten, cut the calories and carbs from the crust out of my daily intake, and indulge without worry. Depending on your eating plan, you can top the pumpkin cups with fresh fruit, nuts, gf cream cheese or mascarpone, whipped cream or whipped coconut cream. So smile and get baking!
