~ Agua de Pepino (Cucumber Water)

Agua de pepino is one of my favorite beverage treats. It’s refreshing, for sure, but it also gives you a nutritive pick-me-up that plain water cannot. Simple to make, this water will come out a bit frothy in the blender. It will store in the refrigerator for 2-3 days without losing the froth. Once you taste the surprising blend of flavors, you may find yourself craving this agua fresca all of the time. You can drink it, too, because the few carbs that are added to the water are nothing compared to the nutritional balance that the cucumber brings. At only 15 calories per 100 grams, cucumber peel is full of fiber. The cucumber contains potassium and electrolytes, meaning that refreshment you taste is really your cells getting replenished. They are also mild diuretics, and have a good dose of Vitamin K inside, which promotes bone strength and helps prevent Alzheimer’s Disease.

Makes 4 – 5 cups

Ingredients:

1/2 medium cucumber, washed and cut into 1 inch thick slices

5 strawberries, washed and capped

juice of 1 or 2 limes (depending on your personal taste)

3 cups of water

3 ice cubes (or more if you want it thicker and icier)

 

Directions:

1. Place all items in the blender and liquefy until smooth and frothy.

2. Pour into a glass and enjoy!

3. Refrigerate any leftover beverage.

 

Note: This is not a sweet drink. It is more tart, but adding a dash of healthier salt like Pink Himalayan or Sea Salt really brings out the flavor.

If you want a sweetened limeade, add some Stevia extract until you reach your desired sweetness level. It will taste sublime!
