This quick and easy vegan breakfast solution is vegetable protein-rich and hearty enough to keep you full throughout your busy morning. When I eat this simple favorite, I find myself slowing down and savoring every bite.
2 slices sprouted bread (Ezekiel Sesame Seed variety or Silver Hills Bakery Hemptation are my favorites, but the Ezekiel is lower calorie while Hemptation ins higher in potein.)
1/2 avocado, sliced
1 tbsp (or less) grape seed oil Vegenaise
1 tsp. hemp seed
Toast two slices of bread to your desired crispness. Smear vegenaise over the bread. Place the sliced avocado wedges on top of both slices of bread. Sprinkle with toasted hemp seeds if desired. You can also add some Cholula or Tapatio if you want to add some spice to your breakfast. Enjoy!
